Yellow Curry is a favorite at Create From Scratch. And it turns out it's pretty easy to make! Easy is a keyword for us so we gave it a go.
What you'll need:
5 garlic cloves
2 inches of ginger
1/2 tbsp of salt
1 tbsp of turmeric
1 tbsp of curry powder
1/2 tsp of corriander
1 can coconut milk (not the kind that comes in the refrigerated section, think coconut cream)
1 onion (chopped)
2-3 potatoes (peeled and chopped)
2-3 chicken breasts (cut in bite sized pieces)
1 bunch of cilantro

In a food processor, blend the first 6 ingredients. And then mix in the coconut milk.
Heat a pan with a little olive oil and cook chicken breasts. When the chicken has browned, remove from pan and add onion and potatoes and cook for about 10 minutes. Mix the browned chicken back in and add the mixture from the food processor. Simmer until everything is nicely cooked (about another 10 minutes), stirring occasionally. Serve with rice and cilantro and enjoy! |
